Chicago Hot Dogs

The Windy City has a flavor all its own that distinguishes itself from other major metropolitan centers.  This extends to their hot dogs as well!  If you’ve never tried a Chicago Dog, then you are missing something (ketchup for one thing!).  Why not invite a few friends over to watch a game and try these for change of pace!  They’re easy to make and with a cold beer, you can’t miss.

  1. Brush outsides of 6 slit hot dog buns with 3 tablespoons melted UNSALTED butter, sprinkle with 1 tablespoon of poppy seeds.
  2. Bake with split sides down, at 350 degrees until warm (about 5 minutes).
  3. Warm 6 all-beef hot dogs in boiling water for 5 minutes and transfer to buns.
  4. Arrange a dill pickle spear on 1 side of each hot dog and 2 tomato wedges on the other side.
  5. Squirt yellow mustard over each in a zig-zag pattern over the top of the hot dog and add a dollop of sweet relish.
  6. Divide one small white onion, finely chopped, among hot dogs.

Top each with a sport pepper or a peperoncino.  Sprinkle with celery salt (this is key!).  Makes 6.
