Leafy Greens Lower Risk of Diabetes

People who ate the most greens, such as Chinese cabbage, kale and spinach had a 14% lower risk for type 2 diabetes than those who ate the least.  Leafy greens have magnesium (an anti-oxidant involved with glucose metabolism) which may explain the findings from the University of Leicester, England.  So be sure to add some to your salads!
